Chipotle Cilantro Pappardelle with Blue Cheese Sauce
Ingredients
- 1 pound Flour City Pasta Chipotle Cilantro Pappardelle
- 8 ounces blue cheese crumbled
- 1 cup heavy cream
- 3 TBS chipotle peppers in adobo sauce
- 2 TBS fresh chive, chopped
- 2 TBS fresh cilantro, chopped
Instructions
- Bring several quarts of water to boil, Add pasta and boil 7-9 minutes until al dente,and drain.
- Meanwhile,In a food processor, puree chipotle peppers in their sauce
- Crumble the blue cheese into a saucepan
- Stir in the heavy cream until smooth
- Heat over medium low until warmed through
- Stir in chipotle puree and chives.
- Serve sauce over cooked pasta, garnishing with cilantro

This is one of our family favorites. We serve it with a side of black bean salsa and greens.
