Chipotle Cilantro Pappardelle with Blue Cheese Sauce
Ingredients
  • 1 pound Flour City Pasta Chipotle Cilantro Pappardelle
  • 8 ounces blue cheese crumbled
  • 1 cup heavy cream
  • 3 TBS chipotle peppers in adobo sauce
  • 2 TBS fresh chive, chopped
  • 2 TBS fresh cilantro, chopped
Instructions
  1. Bring several quarts of water to boil, Add pasta and boil 7-9 minutes until al dente,and drain.
  2. Meanwhile,In a food processor, puree chipotle peppers in their sauce
  3. Crumble the blue cheese into a saucepan
  4. Stir in the heavy cream until smooth
  5. Heat over medium low until warmed through
  6. Stir in chipotle puree and chives.
  7. Serve sauce over cooked pasta, garnishing with cilantro
Notes
This is one of our family favorites. We serve it with a side of black bean salsa and greens.
