Sweet Potato Pappardelle with Browned Butter and Walnuts

Browned Butter and Carmelized Walnuts served over sweet potato pappardelle
Ingredients
  • 1 pound Flour City Pasta Sweet Potato Pappardelle
  • 1 stick of unsalted butter
  • ¼ cup brown sugar
  • ½ cup chopped walnuts
  • Salt to taste
  • Optional sweet cheese such or Grana Podano, Pecorino or Gruviera
Instructions
  1. Bring several quarts of water to boil. Cook pasta 8-10 minutes until al dente. Drain
  2. While the pasta is cooking, melt the butter in a medium skillet
  3. Cook over medium-high heat sitrring frquently until the butter begins to brown
  4. Add brown sugar and walnuts
  5. Lower heat to medium
  6. Stir constantly until coated
  7. Serve over cooked pasta with a bit of grated cheese.
Notes
This has been one of our most popular pastas and a favorite recipe, especially around the holidays. It can be a main dish or a great side for pork chop or tenderloin.
