Lemon Parsley Mafaldine with Plum Tomato and Feta

  • 1 pound Flour City Pasta Lemon and Parsley Mafaldine
  • 1 pound plum tomato, chopped
  • ¼ cup extra virgin olive oil
  • 1 lemon, juiced and zested
  • 1 cup crumbled feta cheese
  • 1 tsp coarse salt
  • ½ tsp freshly ground black pepper
  1. Bring several quarts of water to boil. Add pasta and cook about 7 minutes until al dente. Drain, but reserve 1 Cup of the pasta water.
  2. Combine remaining ingredients with ⅓ cup pasta water.
  3. Add pasta and toss.
  4. Add more water if needed.
Mafaldine is a pasta cut featuring a frilly edge. It's fun and versatile but a little delicate! Don't over cook this pasta, or the edges might begin to peel away!
