Lemon Parsley Mafaldine with Plum Tomato and Feta

Ingredients
- 1 pound Flour City Pasta Lemon and Parsley Mafaldine
- 1 pound plum tomato, chopped
- ¼ cup extra virgin olive oil
- 1 lemon, juiced and zested
- 1 cup crumbled feta cheese
- 1 tsp coarse salt
- ½ tsp freshly ground black pepper
Instructions
- Bring several quarts of water to boil. Add pasta and cook about 7 minutes until al dente. Drain, but reserve 1 Cup of the pasta water.
- Combine remaining ingredients with ⅓ cup pasta water.
- Add pasta and toss.
- Add more water if needed.
Notes
Mafaldine is a pasta cut featuring a frilly edge. It's fun and versatile but a little delicate! Don't over cook this pasta, or the edges might begin to peel away!
