Bon Vivant Orzo with Mushrooms, Snow Peas and Pine Nuts
Ingredients
- 1 pound Flour City Pasta Bon Vivant Orzo
- 2 tsp olive oil
- 2 shallots, minced
- 1 pound fresh mushrooms
- ½ pound snow peas
- ¾ cup pine nuts, toasted
- salt and pepper
Instructions
- Bring several quarts of water to a boil. Add Bon Vivant Orzo and cook 4-6 minutes until al dente. Drain.
- Heat olive oil in medium skillet
- Add shallots and saute until soft
- Add mushrooms and cook until softened and deepen in color
- Add snow peas to the skillet and cook for 1 minute
- Stir in pine nuts and cooked orzo
- Sprinkle with salt and pepper to taste.
Notes
We've varied this recipe in many ways substituting seasonal vegetables such as asparagus for the snow peas. We always serve this as a cool picnic salad, but it can be served warm as a side for any dinner.
