Bon Vivant Orzo with Mushrooms, Snow Peas and Pine Nuts
  • 1 pound Flour City Pasta Bon Vivant Orzo
  • 2 tsp olive oil
  • 2 shallots, minced
  • 1 pound fresh mushrooms
  • ½ pound snow peas
  • ¾ cup pine nuts, toasted
  • salt and pepper
  1. Bring several quarts of water to a boil. Add Bon Vivant Orzo and cook 4-6 minutes until al dente. Drain.
  2. Heat olive oil in medium skillet
  3. Add shallots and saute until soft
  4. Add mushrooms and cook until softened and deepen in color
  5. Add snow peas to the skillet and cook for 1 minute
  6. Stir in pine nuts and cooked orzo
  7. Sprinkle with salt and pepper to taste.
We've varied this recipe in many ways substituting seasonal vegetables such as asparagus for the snow peas. We always serve this as a cool picnic salad, but it can be served warm as a side for any dinner. Flour City Pasta Bon Vivant Orzo is made with a blend of wild mushroom, saffron, spinach and cayenne.
