A warm, comfort food side dish with lots of fall flavor
Ingredients
- ½ pound Flour City Pasta Autumn Harvest Orzo
- 1 cup Pumpkin puree
- 1 cup vegetable or chicken broth
- ⅓ cup milk
- 12 sage leaves, chopped
- 1 shallot, diced
- 1 TBS unsalted butter
- Salt and Pepper
- ⅓ cup Parmesan cheese
Instructions
- Bring about a quart of water to boil. Add pasta and cook 4-5 minutes until al dente. Drain
- Saute shallot and sage in melted butter for about five minutes over medium heat.
- Add the milk and half the broth. Simmer for 5 minutes.
- Stir in pumpkin puree
- Add salt and pepper and remaining broth. Simmer ten minutes until slightly thickened.
- Stir in orzo and parmesan and serve.
